IN THE SOUTH of the Languedoc beside the Mediterranean is the town of Sète. As we arrived on a Sunday in August, there seemed to be more water than land. The sun shone off the vast Étang de Thau to the north, off the Mediterranean Sea to the south, and off the canals that weave through the town.
