Lavender flowers are at their most aromatic when perhaps a quarter of the buds on a spike have opened. Pick the flowers in the morning before the sun hits them. Their deep purple color produces a merely pale pink ice, which is light-textured, but the flavor is perfumed and lingering — you don’t need much. A smoother texture seems to flatter this ice.
